Don't let your ripe bananas go to waste!

Ingredients

500ml (2 cups) flour
5ml Baking Powder
250ml (1 cup) sugar
125ml (1/2 cup) butter or margarine
2 eggs
2.5ml salt
5ml vanilla essence
4 - 5 ripe bananas


Directions

Cream sugar and butter/margarine together.
Add eggs, 1 at a time and stir well.
Add vanilla essence.
Sift dry ingredients together.
Mix sugar mixture with flower mixture.
Mash bananas well, add to mixture.

Place mixture into greased Loaf Tin and bake at 180 deg celcius for +- 45 min to an 1 hour. it is ready when a toothpick or skewer comes out clean.

Serve with butter when cold or even ice cream when hot.
